Warm water is necessary to help melt the fat\/cream contained in this milk. If added to cold water, the fat will clump up and not disperse, even with using an electric blender. This is a full fat milk. Refrigerate reconstituted milk and use within 1 week. Be sure to seal and store the remaining powder in a cool dry place for future use. High heat is never put to our freeze dried milk as pasteurization temperatures can denature the protein and destroy much of the milks naturally occuring vitamins, minerals, and probiotic qualities. Dehydrated milk is different because it's spray heated to pasteurization levels, destroying the friendly bacteria, denaturing the proteins and reducing much of the vitamin and mineral content of the milk.
